"To Buffet or Not to Buffet"

Dear Debra,

I'm planning my first family holiday. Should I set up a food buffet or should I serve everything pre-plated? What are the advantages and disadvantages of each option? Tina, Chicago, IL

Dear Tina,

There are always two questions I ask myself when deciding between a buffet and sit-down dinner.

v What type of atmosphere do I want to create … warm, intimate, party?

v Logistically, what works best for my space given the number of people and who is on the guest list.

Buffets are a great way to entertain a larger group of guests. There is something to be said for being able to set all the food out and letting guests’ help themselves, while you get to relax and enjoy.

Buffets require thoughtful planning and the preparation of more food.  Decide whether all food will be served from one location or from specific ‘stations’ for beverages, appetizers or dessert. You may opt to pass appetizers and serve dessert.

Sit-down dinners are especially nice if your guests’ don’t know each other well, because it provides a setting conducive to conversation. They also provide a venue for a more elaborate menu. Great if you like to cook. Finally, if you love china, like I do, it presents a wonderful opportunity to use all the dishes, crystal and linens you’ve collected!
