Do I remove cooking string before serving?

I would like to serve, at a dinner party, a stuffed chicken breast which requires me to tie the breast with kitchen string before cooking. Should I "de-string" the chicken before serving it to my guests- even if it may cause the filling to fall out? Colleen, Chicago
Dear Colleen,
Yes, you should remove the string from meat or chicken before you serve the dish to guests.
String holds everything together during cooking and helps the dish retain its shape. ‘De stringing’ shouldn’t cause the filling to fall out because the cooking process ‘sets’ it in place. It is best to let the chicken rest about 10 minutes before removing the string.
